Ingredients
  

  • 1 cup cooked brown rice
  • 1 can 15 oz black beans, rinsed and drained
  • 1 ripe avocado diced
  • 1 cup cherry tomatoes halved
  • 1/2 red onion finely chopped
  • 1/4 cup cilantro chopped
  • 1 lime juiced
  • Salt and pepper to taste

Method
 

  1. Cook the brown rice according to package instructions.
  2. Rinse and drain the black beans in a colander.
  3. Chop the red onion, cilantro, and halve the cherry tomatoes.
  4. Cut and scoop out the avocado, then dice it.
  5. In a large bowl, combine rice, black beans, avocado, tomatoes, onion, and cilantro.
  6. Add lime juice, salt, and pepper to taste.
  7. Toss gently to combine all ingredients without mashing the avocado.
