Ingredients
  

  • 4 chicken thighs bone-in, skin-on
  • 1.5 pounds baby potatoes halved
  • 1 cup grated parmesan cheese
  • 4 cloves garlic minced
  • 1/4 cup olive oil
  • 1 teaspoon paprika
  • 1 teaspoon dried oregano
  • Salt and black pepper to taste
  • Fresh parsley for garnish

Method
 

  1. Preheat the oven to 400°F (200°C).
  2. In a large mixing bowl, combine olive oil, minced garlic, paprika, oregano, salt, and pepper.
  3. Add the chicken thighs and halved baby potatoes to the bowl, tossing to coat thoroughly.
  4. Place the coated chicken and potatoes in a single layer in a baking dish.
  5. Sprinkle grated parmesan cheese evenly over the top.
  6. Bake in the preheated oven for 40-45 minutes, or until the chicken is cooked through.
  7. Once cooked, let it rest for 5-10 minutes before serving.
  8. Garnish with fresh parsley and serve warm.
