Ingredients
  

  • 12 large portobello or cremini mushrooms
  • 1 cup fresh spinach chopped
  • 1/2 cup cream cheese softened
  • 1/4 cup grated Parmesan cheese
  • 2 cloves garlic minced
  • 1/2 tsp red pepper flakes
  • Salt and pepper to taste
  • 1 tbsp olive oil

Method
 

  1. Preheat your air fryer to 350°F (175°C).
  2. Clean the mushrooms and remove the stems gently.
  3. In a skillet, heat olive oil over medium heat and sauté the minced garlic for 1-2 minutes until fragrant.
  4. Add chopped spinach and cook until wilted, approximately 4-5 minutes.
  5. In a bowl, mix together the sautéed spinach and garlic, cream cheese, Parmesan, red pepper flakes, salt, and pepper until well combined.
  6. Spoon the creamy mixture generously into each mushroom cap.
  7. Arrange the stuffed mushrooms in the air fryer basket in a single layer.
  8. Air fry the mushrooms for 15-20 minutes, or until golden and crisp.
  9. Let the mushrooms cool for a few minutes before serving.

Notes

For the best texture, serve immediately after cooking. Leftovers can be stored in an airtight container for up to two days, but the mushrooms are best enjoyed fresh!
