Prepare the marinade by mixing olive oil, garlic, red pepper flakes, salt, and black pepper in a bowl.
Cut the chicken thighs into bite-sized pieces and add them to the marinade. Mix well and let sit for at least 30 minutes.
Preheat your grill or grill pan over medium-high heat.
Thread the marinated chicken pieces onto skewers, leaving a little space between each piece for even cooking.
Grill the skewers for 10-12 minutes, turning occasionally until the chicken is cooked through and has a nice char.
In the last minute of grilling, sprinkle parmesan cheese over the chicken skewers and let it melt slightly.
Remove from the grill, garnish with fresh parsley, and serve immediately.
