- Prepare the marinade by combining olive oil, soy sauce, garlic powder, paprika, salt, and pepper in a bowl.
- Add the cubed chicken to the marinade, ensuring each piece is well coated. Let it marinate for at least 15 minutes.
- While the chicken marinates, prepare your vegetables: chop the bell pepper, zucchini, and onion into even pieces for uniform cooking.
- Skewer the marinated chicken and veggies alternately onto skewers, leaving a little space between them for air circulation during cooking.
- Preheat your air fryer to 400°F (200°C) for about 5 minutes.
- Place the skewers in the air fryer basket in a single layer, ensuring no overlaps. Cook for 12-15 minutes, flipping halfway through.
- Check for doneness: the chicken should read an internal temperature of 165°F (74°C).
- Once cooked, remove the skewers and let them rest for a few minutes before serving.
