  • 1 pound chicken breasts cubed
  • 1 red bell pepper cut into chunks
  • 1 zucchini sliced into thick rounds
  • 1 yellow onion quartered
  • 3 tablespoons olive oil
  • 2 tablespoons soy sauce
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • Salt and pepper to taste

  1. Prepare the marinade by combining olive oil, soy sauce, garlic powder, paprika, salt, and pepper in a bowl.
  2. Add the cubed chicken to the marinade, ensuring each piece is well coated. Let it marinate for at least 15 minutes.
  3. While the chicken marinates, prepare your vegetables: chop the bell pepper, zucchini, and onion into even pieces for uniform cooking.
  4. Skewer the marinated chicken and veggies alternately onto skewers, leaving a little space between them for air circulation during cooking.
  5. Preheat your air fryer to 400°F (200°C) for about 5 minutes.
  6. Place the skewers in the air fryer basket in a single layer, ensuring no overlaps. Cook for 12-15 minutes, flipping halfway through.
  7. Check for doneness: the chicken should read an internal temperature of 165°F (74°C).
