Preheat your air fryer to 360°F (182°C).
Prepare the bell peppers by cutting the tops off and removing the seeds.
In a skillet over medium heat, brown the ground beef until fully cooked, about 6-8 minutes.
Stir in diced tomatoes, salsa, taco seasoning, and half of the cheese, mixing well.
Fill each pepper with the beef mixture, pressing down lightly to pack it in.
Spritz the stuffed peppers lightly with olive oil spray and place them in the air fryer basket.
Cook for 12-15 minutes, until the peppers are tender and the cheese is melted and golden.
Remove from the air fryer and let cool slightly before serving.
