Ingredients
  

  • 8 ounces pasta
  • 1 cup sun-dried tomatoes chopped
  • 3 cloves garlic minced
  • 1 teaspoon dried oregano
  • 4 cups vegetable broth
  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese
  • Salt and pepper to taste
  • Fresh basil for garnish

Method
 

  1. In a large pot, combine pasta, sun-dried tomatoes, garlic, oregano, and vegetable broth.
  2. Bring the mixture to a boil over medium-high heat.
  3. Reduce heat to a simmer and cover, cooking for about 10-12 minutes or until pasta is al dente.
  4. Remove from heat and stir in the heavy cream and Parmesan cheese until well combined.
