Ingredients
  

  • 3-4 pounds chuck roast
  • 1 tablespoon vegetable oil
  • 2 cups beef broth
  • 1 medium onion sliced
  • 4 carrots cut into chunks
  • 3 cloves garlic minced
  • 2-3 sprigs fresh thyme
  • Salt and pepper to taste
  • 2 pounds potatoes peeled and quartered
  • 1/2 cup heavy cream
  • 4 tablespoons butter

Method
 

  1. Sear the chuck roast in vegetable oil.
  2. Remove the roast and add onions, garlic, and carrots.
  3. Deglaze the pot with beef broth.
  4. Return the roast to the pot, add thyme, salt, and pepper.
  5. Seal the lid and cook on high pressure.
  6. Prepare potatoes while the roast cooks.
  7. Cook the potatoes for mashed potatoes.
  8. Mash the potatoes with cream and butter.
