Ingredients
  

  • 1 pound ground beef
  • 1 medium head of cauliflower
  • 1 tablespoon olive oil
  • 1 small onion diced
  • 2 cloves garlic minced
  • 1 tablespoon chili powder
  • 1 teaspoon ground cumin
  • 1/2 teaspoon smoked paprika
  • Salt and pepper to taste
  • 1/2 cup shredded cheese cheddar or pepper jack
  • Fresh cilantro for garnish

Method
 

  1. Preheat the oven to 400°F (200°C).
  2. Cut the cauliflower into florets and toss with olive oil, salt, and pepper.
  3. Spread the cauliflower on a baking sheet and roast for 25-30 minutes.
  4. In a large skillet over medium heat, add the ground beef and cook until browned.
  5. Add the diced onion and cook until translucent.
  6. Stir in the minced garlic, chili powder, cumin, and smoked paprika.
  7. Season with salt and pepper, then mix thoroughly.
  8. Remove the skillet from heat and prepare to serve.
  9. Assemble the bowls by layering cauliflower and beef, then sprinkle with cheese and cilantro.
