Ingredients
  

  • 12 ounces of pasta penne or rigatoni
  • 8 ounces of smoked sausage sliced
  • 2 cups of heavy cream
  • 8 ounces of fresh mozzarella torn into pieces
  • 1 cup of grated Parmesan cheese
  • 4 cloves of garlic minced
  • 1 tablespoon of olive oil
  • Salt and black pepper to taste
  • Fresh basil for garnish

Method
 

  1. Cook the pasta according to package directions until al dente, then drain and set aside.
  2. In a large skillet, heat the olive oil over medium heat and add the sliced smoked sausage.
  3. Add the minced garlic and sauté for about 1 minute until fragrant.
  4. Pour in the heavy cream and stir to combine, letting it simmer for about 5 minutes to thicken slightly.
  5. Stir in the torn mozzarella and grated Parmesan cheeses, mixing until melted and well incorporated.
  6. Combine the cooked pasta with the sauce, tossing until well coated, adding reserved pasta water if needed.
  7. Season with salt and black pepper to taste, and serve hot, garnished with fresh basil.
