Ingredients
  

  • 1 lb ground beef
  • 1 onion chopped
  • 2 cloves garlic minced
  • 1 bell pepper diced
  • 1 can 15 oz black beans, drained and rinsed
  • 1 can 15 oz corn, drained
  • 1 can 10 oz diced tomatoes with green chilies
  • 1 cup shredded cheddar cheese
  • 1 tsp chili powder
  • Salt and pepper to taste

Method
 

  1. Brown the ground beef in a skillet over medium heat.
  2. Add onions and garlic to the skillet, and sauté until soft.
  3. Transfer the beef mixture to the slow cooker.
  4. Add bell pepper, black beans, corn, and diced tomatoes into the slow cooker.
  5. Sprinkle in chili powder, salt, and pepper.
  6. Cook on low for 6-8 hours or high for 3-4 hours.
  7. In the last 30 minutes of cooking, sprinkle shredded cheddar cheese on top.
  8. Serve warm with your favorite toppings.
