Ingredients
  

  • 1 lb ground beef
  • 4 medium potatoes diced
  • 1 medium onion chopped
  • 2 cloves garlic minced
  • 1 bell pepper chopped
  • 1 can 14.5 oz diced tomatoes, undrained
  • 2 teaspoons paprika
  • Salt and pepper to taste
  • 2 tablespoons olive oil

Method
 

  1. Heat olive oil in a large skillet over medium heat.
  2. Add the chopped onion and bell pepper; sauté until softened.
  3. Stir in the minced garlic; cook for an additional minute.
  4. Add ground beef to the skillet; cook until browned, breaking it apart with a spatula.
  5. Season the meat with paprika, salt, and pepper; mix well.
  6. Stir in the diced potatoes and tomatoes, then mix thoroughly.
  7. Cover the skillet; reduce heat to low and simmer for about 20 minutes.
  8. Check potatoes for doneness; they should be tender when pierced with a fork.
