Ingredients
-
1 box white or vanilla cake mix (plus ingredients listed on box)
-
8 oz cream cheese, softened
-
1/3 cup powdered sugar
-
1 tsp vanilla extract
-
1/2 cup heavy whipping cream
-
1 cup chopped fresh strawberries
-
1 cup crushed Golden Oreos (for topping)
-
Whipped cream (optional, for topping)
-
Parchment paper (for rolling)
Instructions
Step 1: Prep the Cake Layer
-
Preheat oven to 350°F (175°C).
-
Line a jelly roll pan with parchment paper.
-
Prepare cake batter as directed on the box and pour it into the pan.
-
Bake for 12-15 minutes, until a toothpick comes out clean.
Step 2: Roll the Cake
-
While the cake is still warm, use the parchment to roll it tightly into a log.
-
Let it cool completely rolled up. This helps it “remember” its shape.
Step 3: Make the Cheesecake Filling
-
In a bowl, beat cream cheese, powdered sugar, and vanilla until smooth.
-
In a separate bowl, whip the cream to stiff peaks.
-
Fold whipped cream into the cream cheese mixture gently.
Step 4: Assemble
-
Unroll the cooled cake and spread the filling evenly.
-
Add chopped strawberries.
-
Roll it back up tightly.
-
Chill for 30 minutes to set.
Step 5: Decorate and Serve
-
Top with whipped cream, more strawberries, and crushed Oreos.
-
Slice and enjoy!
