Description

Ready to fall in love with dessert all over again? Meet your new favorite treat: Strawberry Shortcake Cheesecake Rolls. These beauties combine the tangy richness of cheesecake with the sweet, summery goodness of strawberry shortcake—all rolled up in a soft, pillowy swirl. They’re creamy, fruity, and absolutely irresistible.

Ingredients

Scale
  • 1 box white or vanilla cake mix (plus ingredients listed on box)

  • 8 oz cream cheese, softened

  • 1/3 cup powdered sugar

  • 1 tsp vanilla extract

  • 1/2 cup heavy whipping cream

  • 1 cup chopped fresh strawberries

  • 1 cup crushed Golden Oreos (for topping)

  • Whipped cream (optional, for topping)

  • Parchment paper (for rolling)

Instructions

Step 1: Prep the Cake Layer

  1. Preheat oven to 350°F (175°C).

  2. Line a jelly roll pan with parchment paper.

  3. Prepare cake batter as directed on the box and pour it into the pan.

  4. Bake for 12-15 minutes, until a toothpick comes out clean.

Step 2: Roll the Cake

  1. While the cake is still warm, use the parchment to roll it tightly into a log.

  2. Let it cool completely rolled up. This helps it “remember” its shape.

Step 3: Make the Cheesecake Filling

  1. In a bowl, beat cream cheese, powdered sugar, and vanilla until smooth.

  2. In a separate bowl, whip the cream to stiff peaks.

  3. Fold whipped cream into the cream cheese mixture gently.

Step 4: Assemble

  1. Unroll the cooled cake and spread the filling evenly.

  2. Add chopped strawberries.

  3. Roll it back up tightly.

  4. Chill for 30 minutes to set.

Step 5: Decorate and Serve

  1. Top with whipped cream, more strawberries, and crushed Oreos.

  2. Slice and enjoy!
