    For the Glaze:

    1 cup powdered sugar

    2 tablespoons 7-Up soda

    ½ teaspoon lemon extract

Instructions

  • Preheat and Prepare: Preheat your oven to 325°F (165°C). Grease and flour a 10-inch Bundt pan to prevent sticking.

  • Cream Butter and Sugar: In a large mixing bowl, cream the butter and sugar together until light and fluffy, about 5-7 minutes. This step is crucial for a tender cake.

  • Add Eggs: Add the eggs one at a time, beating well after each addition to ensure a smooth batter.

  • Incorporate Dry Ingredients: Gradually add the sifted flour to the mixture, mixing until just combined.

  • Add Lemon Extract and 7-Up: Stir in the lemon extract, then gently fold in the 7-Up soda. The batter will be thick and creamy.

  • Bake: Pour the batter into the prepared Bundt pan and smooth the top. Bake for 1 hour and 15 minutes, or until a toothpick inserted into the center comes out clean.

  • Cool: Allow the cake to cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.

  • Prepare the Glaze: In a small bowl, whisk together the powdered sugar, 7-Up, and lemon extract until smooth.

  • Glaze the Cake: Once the cake has cooled, drizzle the glaze over the top, allowing it to cascade down the sides.
