- 4 cloves garlic, minced
- 1 medium onion, chopped (optional)
- 1 can coconut milk (full-fat for creaminess)
- 1 lemon (zest and juice)
- 1 tsp smoked paprika
- ½ tsp chili flakes (optional)
- Salt and pepper to taste
- Fresh herbs (parsley, cilantro, or thyme)
Instructions
- Marinate the Chicken (optional): Combine olive oil, lemon juice, garlic, and spices in a bowl. Add chicken and marinate for 30 minutes or overnight.
- Heat the Pan: In a large skillet or Dutch oven, heat oil over medium heat.
- Sear the Chicken: Place chicken in the pan and cook for 4–5 minutes per side until golden. Remove and set aside.
- Make the Sauce: In the same pan, sauté garlic and onions. Add coconut milk, lemon zest, and seasoning. Simmer for 5 minutes.
- Combine and Simmer: Return chicken to the pan and cover. Simmer for 15–20 minutes until chicken is cooked through and sauce is thickened.
